Too hot to cook

The forecast calls for me NOT in the kitchen! I have been trying to figure out what the heck to feed myself with the outdoor temps hitting 90 on the Cape for the last week and the foreseeable future. When this scenario arises, I usually eat junk food, heated in the microwave, or wait until dinner and get takeout. My schedule has been murderous with the kids, starting two businesses, and going back to school- healthy choices haven’t been on my radar. My fitness friend Elise started a service for her clients called Prepfoodmama, and I gave it a whirl this week.
I am happy to report after my first meal of “southwest salad with cilantro lime shrimp and avocado greek yogurt,” It was fabulous. I have been working away all morning on the computer, while having the “mold doctors” rip out half of my ceiling from the water leak disaster, but, I had a healthy lunch! Thanks, Elise- ps that dressing is dope!
